YOU DON’T ALLOW THE PAN TO GET HOT ENOUGH.

If you don’t allow the pan to get hot enough to properly sear or sauté, you’re not allowing it to do its job properly. A hot pan is a valuable tool in the kitchen, but you must let it work as it was designed to.
