Cut potatoes into 1/4” lengthwise pieces, ensuring the strips are of uniform size, then soak in cold water for 30-45 minutes. Drain and blot dry with paper towels. Lightly toss the dried fries with olive oil or a wee dollop of an herbed vinaigrette (great on sweet potato fries), then spread evenly on a baking sheet lined with parchment paper – which will also help to absorb excess water. And remember, don’t crowd your fries… give them room to breathe and bake!
