Beets improves brain neuroplasticity because of the nitrates present in it. These nitrates help increase oxygenation of the somatomotor cortex, a brain area that is often affected in the early stages of dementia. As people get older, blood flow to the brain decreases which leads to decreased cognition, and eating beets can prevent this. The studyby Dr. Jack Rejeski, Department of Health and Exercise Science, Wake Forest University, US, confirms this.
