Here is a simple method of how to distinguish at home if watermelon has high nitrate content. The method consists of inserting a piece of watermelon brick into a bowl of water at room temperature. If it has a high nitrate content, the water will take on a bright pink color. Take a piece of seedless watermelon pulp and put it in a bowl of water. Leave for 10 minutes! If the water turns pink, then watermelon has high levels of nitrates. If the water remains colorless, the watermelon is fine.
