This fizzy fermented drink has become very trendy in recent years. It’s a type of fermented tea made using a “symbiotic culture of bacteria and yeast” (SCOBY). Although microbial populations in SCOBY cultures vary, it usually contains a beneficial yeast called Saccharomyces and other species.It’s believed that kombucha originated in Northeastern China and has been also consumed throughout Russia and eastern Europe.
